This coffee is from Ratnagiri Estate in Chikmagalur, Karnataka, India, grown at 1340 meters altitude. Produced by Ashok and Divya Patre, the third generation to work the land. The coffee is Catuai variety and underwent natural processing with anaerobic fermentation in custom-made bioreactors for 36 hours using lab-isolated microbes, followed by drying on raised beds for 25 days. The processing is guided by a team including two microbiologists who track fermentation through microbial plating and titratable acidity measurements. This medium roast for espresso brewing features notes of amaretto, cherry, and dark chocolate with a rich and decadent profile. Quality score of 86.25, harvested between December and March.

Their approach is founded on transparency, and since 2018, they have published the "farmgate" price they pay directly to producers. They focus on building partnerships with producers, whom they see as professional colleagues.
