Fieldwork CoffeeAbout This Coffee
This coffee comes from San Isidro, a small farm in Huila, Colombia, at 1,757 meters altitude. The farm is owned and operated by Florencio Ortiz Molina, a second-generation coffee grower with over 50 years of experience. The lot consists of Caturra and Colombia varieties. Processing is fully washed with sealed-tank anaerobic fermentation lasting 48 to 72 hours, followed by washing and drying for around 15 days to a final moisture content of 10-11%. The coffee features layers of dried apricot, Seville orange marmalade, and tangelo brightness, with Medjool dates and sugarcane adding depth. Pandan brings a herbal and slightly tropical lift, with a silky and refreshing structure.

Fieldwork's philosophy focuses exclusively on washed process coffees, prizing clarity, sweetness, and sense of place across their entire range.
