El Mirador Rare is a Colombian coffee featuring the rare Pink Bourbon variety from the Huila province. It is processed using the washed method, involving depulping, fermentation for about 48 hours, and drying for 15 days on elevated tables. Flavor notes include plum, fresh hops, and stone fruits with a clear, fine body. The farm is family-run by Duverney Sánchez at 1,600 meters altitude.
