This single origin coffee is from Finca Patio Bonito in Acevedo, Huila, Colombia, at 1700 meters elevation. The coffee is a Bourbon Aji variety processed using the washed method. It offers flavor notes of gooseberry and panela sugar. Finca Patio Bonito is a family-run farm operated by Carlos Arturo Trujillo, who has farmed coffee for almost 50 years, and his daughter Paola Trujillo, who joined in 2022 and introduced improvements in fermentation control and processing techniques.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process.
