About This Coffee

This Pacas variety coffee comes from La Cima del Cielo farm in the El Cedral area of Santa Bárbara, Honduras, owned by Pedro Erazo. The farm is situated at 1,580 meters above sea level where cool, mountainous conditions slow cherry maturation and produce denser beans. The Isabel lot was processed using traditional washed methods, with ripe cherries hand-picked selectively, floated to remove defects, pulped, fermented in controlled tanks, thoroughly rinsed, and dried on raised beds with frequent turning. The cup profile features orange, hazelnut, and herbal notes with crisp acidity and clean sweetness.
