About This Coffee

This Ethiopian coffee is from the Chelchele region at 2000-2200 meters altitude. It features heirloom varieties and is processed using the supernatural method. The supernatural process involves training farmers to pick deep red cherries with more than 22 Brix reading, then fermenting them in barrels for exactly 36 hours in slightly anaerobic conditions to boost fruit flavors, followed by drying on African beds for 15-18 days. The flavor profile includes pineapple, strawberry, and cantaloupe notes.
