This is a natural processed coffee from Ethiopia, specifically from the Idido region of Yirgacheffe. Grown by smallholder farmers in the Kabele of Aricha in Gedeo County at 1850-1880 meters above sea level. The coffee is from heirloom varieties and features flavor notes of pineapple, candy, and blueberry. The coffee is 100% organic though not certified, as farmers don't use chemical fertilizers, pesticides or herbicides. Aricha mill pays above market price for quality red cherry and provides cash incentives for farmers delivering high-quality cherries. Coffee is selectively hand-picked, floated at the mill, and dried on raised beds over several weeks until reaching 12% humidity.
