Colombia - El Vergel Estate - Java Blossom

This is a Java variety coffee from El Vergel Estate in Colombia, grown at 1450 meters altitude. The coffee undergoes a carbonic maceration process for 96 hours with CO2 induced up to 6 bars to create high pressure and break down the cascara in an anaerobic state. It is then sun-dried on raised beds for 25 days and stabilized for 30 days in GrainPro bags before milling. The Bayter Family has operated El Vergel Estate since 1995, with specialty coffee cultivation beginning in 2016. The coffee features flavor notes of floral, apple, herbal tea, sugar, and melon.
