This Colombian coffee is from Finca El Rosal in El Rosario, Acevedo, Huila region, grown at 1,650 meters altitude. The producer is Wilmer Cubillos who farms the Tabi variety—a cross between Typica, Bourbon, and Timor. The coffee is processed using the natural method, with cherries fermented for 18 hours in sacks before pulping, followed by a secondary six-hour fermentation in tanks and sun-drying. Roasted as a light filter roast, this coffee offers notes of ripe pineapple, cacao, sweet apple, and panettone, with a sweet, dense, and vibrant cup profile.
