About This Coffee

A rare nano-lot natural anaerobic Maragogype from the Emiliano Zapata indigenous community, located in the El Triunfo Biosphere Reserve in the Sierra Madre of Chiapas, Mexico. Produced by Doña Antonia Gómez, a respected Tzeltal community figure, who cultivates just over two hectares between 1,600 and 1,900 meters altitude. The Maragogype Criollo variety — a traditional cultivar with large beans — is harvested at 23° Brix, fermented anaerobically for 60–72 hours at 22°C, then dried for 20 days on partially shaded African beds to 11% humidity. Processed by Beneficio Edelmira micromill. Flavor notes include red currant, raspberry, passion fruit, and cacao nib, with a vibrant acidity and tropical, elegantly structured cup. Score: 88.
