About This Coffee

A Maracaturra (locally called Maragogype-Caturra) from the indigenous community of Emiliano Zapata, within the El Triunfo Biosphere Reserve in Chiapas, Mexico, grown at 1,700–1,800 meters altitude. Produced by families Sebastián Meza, Raymunda Romero, and Antonio Giron, and processed at the Beneficio Edelmira micromill under the supervision of Marco Romero Santíz. Cherries are harvested at 24° Brix, then undergo 60–72 hours of anaerobic natural fermentation at 22°C before being dried on African beds for 20 days. The cup profile features tropical fruits, ripe red fruits, and milk chocolate, with a full body and natural sweetness.
