El Llano is located on the hills south of El Llano de la Piedra, a small town where the Montero family resides. The plantation spans 3 hectares and is planted with Catuai coffee variety. The fertile soil and shade from bananas, lemons, mangoes, and poros provide advantages for long-term health and cup results. The Pirris River valley offers optimal light exposure and a constant cooling breeze. The coffee is processed using the honey method at Don Eli wet mill. After depulping, the beans pass through mechanical demucilaging in the Penagos Eco-Pulping machine, with all mucilage left on the beans for drying to increase complex body and sweetness.

Tucked along Rue Saint Jean in Quebec City, Cantook Micro Torrefaction carries a name inspired by the lumberjack's tool known as a "can't hook," a nod to the collaboration between French and English settlers that shaped Canada's identity. The family behind Cantook has been in coffee since 1982, with the current business on Saint Jean Street operating since 1998 under co ownership since 2005. They roast on a Diedrich IR 12, with the process fully visible to guests who come for expertly prepared pour overs, espresso drinks, and the cafe's beloved matcha cookies.
