This Sidra variety coffee comes from Finca La Hermosa, located on the slopes of the Acatenango volcano in the Chimaltenango region of Guatemala. The farm was founded in 2010 by producer Max Pérez and sits at 1,600 meters altitude on mineral-rich volcanic soil. The coffee is processed using a honey method where cherries are partially depulped after manual harvest, leaving some pulp and mucilage on the beans. The beans are then sun-dried on patios with regular turning to ensure uniformity and prevent excessive fermentation, helping retain the fruit's natural sugars. The Sidra variety is known for its aromatic elegance and great complexity.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations. The first permanent cafe opened on Beaubien Street in 2016, and roasting now takes place on a Loring S15 Falcon at the Rue Masson location.
