This coffee is a Sidra variety from Finca La Hermosa, located on the fertile slopes of the Acatenango volcano in the Chimaltenango region of Guatemala. Grown at an altitude of 1,600 meters on mineral-rich volcanic soil, this coffee is processed using a partial honey method, where some pulp and mucilage are left on the beans during slow drying on patios. This process preserves natural sugars, resulting in an elegant and complex cup with flavor notes of grape, nectarine, and jasmine.
What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
