This coffee is from Finca El Morito in San Ignacio, Cajamarca, Peru, grown at an altitude of 1,850-1,870 meters. It features the Marshell variety, which is an expression of Bourbon. The farm has been passed down through three generations and specializes in varieties like Caturra Amarillo and Bourbon Marshell. The coffee is washed processed and offers a classic profile with 65% dark chocolate, roasted nuts including Brazil nut and toasted almond, and cherry liqueur notes. The cup has a dense, enveloping sweetness with a long, elegant finish that balances bitterness, sweetness, and subtle structuring acidity.
