This coffee comes from Baroida Estate in Papua New Guinea's Eastern Highlands, Kainantu District, at 1,700-1,850 meters above sea level. The estate is run by the Colbran family, who have been growing coffee here since the 1960s and now cover about 220 hectares. The coffee is grown from a mix of Typica, Bourbon, Mundo Novo, and Arusha varieties. Cherries are selectively picked, pulped on disc pulpers, dry-fermented for around 36 hours, washed with circular water flow, and sundried on tarps. The washed process results in flavors of berries, chocolate, and fruit cake. This lot is roasted for espresso, leaning darker than the typical omni roast.
