This decaffeinated coffee comes from the La Hammonia farm in the Matagalpa region of Nicaragua at 1400-1800 meters elevation. The farm is part of the Selva Negra eco-village, a self-sustainable community operated by generational coffee farmers Maui and Eddy. The coffee features a mixed varietal of Caturra and Catuai, processed using the mountain water decaffeination method which is chemical-free and preserves the original flavor characteristics. The decaf process involves soaking beans in water for approximately 8 hours to diffuse caffeine, which is then removed through carbon filters. Flavor notes include goji berries and brown sugar.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
