This single origin coffee comes from the Limoncillo farm in the Matagalpa region of Nicaragua at 850-1110 meters elevation. The farm is part of the Mierisch family's network, spanning 119 hectares with 54 preserved under Rainforest Alliance and UTZ certification. The coffee is Yellow Pacamara variety, a rare mutation where only 10% of Pacamara crops remain yellow instead of reverting to red. It is processed using the black honey method. The cup profile features notes of passionfruit, loquat, mango, and honey with a buttery body and lively acidity. The farm name honors the small lemon trees that flourished there when first acquired.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
