About This Coffee

This Geisha coffee from Iris Estate in Volcán, Chiriquí, Panama is grown at 1,850-2,300 meters above sea level on the slopes of Volcán Barú. The Elipse lot is processed using a Nitrogen Macerated Washed method where ripe cherries (harvested at 20-22 Brix) are placed in sealed nitrogen tanks for controlled fermentation and maceration for around 100 hours. After fermentation, cherries are pulped, fully washed to remove mucilage, and slow-dried on raised beds. The coffee features bright floral aromatics and juicy stone fruit qualities with notes of peach, orange blossom, and mandarin.
