About This Coffee

This Ethiopian coffee comes from the Gedio region of Yirgacheffe, cultivated on a 120-hectare farm at 2050-2100 meters altitude. The climate averages 23°C annually, with flowering in August and harvest between November and December. The coffee features mixed heirloom varieties and undergoes carbonic maceration processing, where freshly harvested cherries are sealed in stainless steel tanks for 10 days of anaerobic fermentation, creating a pressurized carbonic environment. After fermentation, the cherries transition from bright red to golden yellow and are dried on African raised drying beds for 20-25 days. This filter roast offers tasting notes of blackberries, raisins, and wine grapes with intensified fruitiness and bold, complex flavors.
