Manta Ray Coffee Roasters

About This Coffee

This coffee is a Single Origin Espresso from the Sidama region of Ethiopia, grown at 2300 meters altitude. It is a natural processed coffee from the Yaye Washing Station, part of the Odakko Project. The coffee features the 74158 variety, cultivated by 50 smallholder farmers in the villages of Yaye and Chericho at altitudes between 2150-2300 meters. Cherries were harvested over a four-day window, hand-sorted to achieve a 95% ripe to 5% overripe ratio, and dried on raised beds for 28 days to reach 12% moisture content. The cup profile offers floral, bergamot, red fruit, and blackberry notes with a gentle, sugary sweetness.
