About This Coffee

This honey processed coffee from Ethiopia comes from the Halaka area in the Guji region at 2150 meters elevation. Produced by Gizaw Alemayehu, the coffee undergoes honey processing where ripe, handpicked cherries are partially de-pulped and dried with the sticky flesh remaining for 18-30 days until reaching 11.5% moisture content. The coffee features mixed heirloom varieties and is roasted as a filter roast. The cup profile includes floral notes, loquat, honeydew, and raspberry liquorice, with outstanding sweetness and body while retaining the cleanliness of a washed coffee.

The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
