This naturally processed coffee from Ethiopia's Guji region is grown at 1800-2200 meters above sea level. Produced by Gizaw Alemayehu at the Gizaw & Frehiwot Washing Station, the coffee consists of mixed heirloom varieties. Cherries are hand-picked, floated for defects, graded, and placed on raised African drying beds. To protect from excessive sun exposure, cherries are monitored for moisture, turned for even drying, and shaded between 12-3pm. Drying takes 20-30 days until reaching 11.5% moisture content. The cup profile features floral notes, black tea, blueberry, hi-chew stick grape, black plum, blackberry, and dark chocolate characteristics.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
