This is a single origin coffee from the Yirgacheffe region of Ethiopia, grown at elevations between 1950-2200 meters. The coffee features Kurume, Dega, and Wolisho varieties. It is processed using the Red Honey method, a rare approach in Ethiopia. Handpicked ripe cherries undergo a 48-hour fermentation before being de-pulped with most mucilage intentionally left intact. The coffee is dried on raised African beds over 14-18 days under increased shade, reaching a final moisture content of 11.5%. This Filter Roast coffee offers floral aromatics, apricot sweetness, citrus brightness, and black tea elegance, combining the clarity of washed coffees with the sweetness and complexity of natural processing.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
