This single origin coffee is from Ecuador, specifically from the La Perla region in Pichincha province at 1350 meters elevation. The coffee is a Typica variety processed using the washed method. It comes from two farms, Maputo and Hakuna Matata, owned and operated by Henry and Verena Gaibor. The region is known for its cool climate with misty afternoon clouds, cool nights, and an average temperature of 18.3°C. The farms are located near volcanoes and rose farms that inform the soil characteristics. The producers control their own wet-milling and drying processes. The coffee offers flavor notes of herbal, cranberry juice, and sugarcane.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
