This Gesha from Finca Soledad in Imbabura, Ecuador is grown at 1,515 meters above sea level by producer José Ignacio "Pepe" Jijón. The Gesha variety is T2722 lineage. The coffee undergoes Wave Washed processing, which includes a 3-day whole cherry fermentation with mosto juice integration during the final 2 days, followed by washing and 40+ days of drying in dark rooms and shaded patios. The process uses controlled temperature modulation from high to low to preserve embryo vitality. The cup profile features jasmine, lemon tea, and orange blossom notes with finger lime acidity, light silky body, and a juicy finish with white florals.
