About This Coffee

La Virgen is a single-origin coffee from Guadalupe, Huila, Colombia, grown at 1200–2000 meters altitude by producer Migdonio Mendez. This lot features Caturra, Colombia, and Castillo varieties, processed using the washed method. It has been decaffeinated via the CO₂ Subcritical (Carbonic Natural) process, developed by CR3-Kaffeeveredelung in Bremen, Germany, which uses liquid CO₂ at low temperature and pressure to extract caffeine while preserving flavor compounds. Tasting notes include milk chocolate, with a clean and vibrant cup profile.
