This single origin coffee comes from the Tarrazu region in Costa Rica, from the Hacienda Cafetalera estate which is part of the Coopetarrazu (Cooperative Tarrazu). It is grown at 1450-1600 meters above sea level and features Caturra and Catuai varieties. The coffee undergoes anaerobic natural processing where cherries are picked at peak ripeness, pulped, and sealed in steel fermentation tanks for 4 days before being dried on raised African drying beds until reaching 11.2% moisture content. This is an SHB (Strictly Hard Bean) coffee with flavor notes of cinnamon, star anise, and prune, offering high sweetness with a light body. The cooperative operates social initiatives including Las Casas de La Algeria, a childcare center for workers' children.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
