A rare Sudan Rume from Buenos Aires Farm in the village of Palmar de Criollo, Huila, Colombia, grown at 1,750–1,800 meters altitude. Led by Johanny González, the farm focuses on quality and sustainable farming. Sudan Rume is a natural mutation of the Bourbon variety, prized for its delicate flavor and silky texture. Processing involves 48-hour Mosto recirculation pre-fermentation, a Thermal Shock at ~50°C, and ~80 hours of anaerobic fermentation. Tasting notes include blueberry, raspberry, rose, with juicy and long-lasting finish.
