The Yak Ikuk coffee is a washed Typica variety from Oaxaca, Mexico, grown at around 1620 meters altitude. The coffee offers flavor notes of peach, starfruit, and jasmine with a pleasant acidity reminiscent of starfruit. Processing involves a 24-hour fermentation in tanks without water, followed by washing, depulping, and drying on cloths for five days.
