This coffee features the THA1 variety from Quang Tri Province, Vietnam. THA1 is an F5 (fifth generation) hybrid of Ethiopian and Vietnamese coffee that took 25 years to develop and has only been available to farmers since 2016. This lot comes from Huong Phung farm, where the THA1 plants are just five years old in their second harvest. The coffee undergoes anaerobic natural processing with ripe cherries dry fermented for five days, then slow-dried over 30 days. The cup offers notes of sweet prune, persimmon, bubble gum, berry jam, fermented black tea (pu'er), and brown sugar.
