Coffee Wallas

About This Coffee

This Liberica coffee is sourced from Vietnam's Huong Hoa region in Quang Tri province at 600 meters altitude. The coffee features century-old Liberica cultivars grown in an ideal terroir with a mean temperature of 25°C and exceptional humidity. Ripe red cherries undergo an extended 120-hour anaerobic dry fermentation, followed by a 30-day drying protocol. This experimental processing method produces a fruit-forward cup with juicy notes of blueberry wine and lychee, with raisin and wine-like aromas on the nose and a long, sweet stevia-like aftertaste. The coffee is cultivated through 96B's innovative approach working with progressive local farmers since 2022.

Coffee Wallas

Launched in 2025 as a project by The Roasters Pack, Coffee Wallas is an Asian owned Toronto roastery dedicated to spotlighting specialty coffee from across Asia. The name roughly translates to "People of Coffee," capturing the mission to celebrate diverse Asian coffee profiles that are often underrepresented in the specialty world. Their lineup features origins from Vietnam, Myanmar, Laos, China, and Papua New Guinea, including innovative processing methods like pichia yeast fermentation and anaerobic naturals. Roasted in Toronto and shipped across Canada and the US, Coffee Wallas brings a fresh perspective to the conversation about where exceptional specialty coffee comes from.
