About This Coffee

A single-origin coffee from the Timbuyacu farm in the Colasay district of Peru. The variety is locally known as "Bourbon de Colasay," a unique arabica cultivar that resembles Bourbon in appearance but genetic testing suggests it is a local mutation or cross genetically similar to Catimor, without the vegetal or astringent characteristics typically associated with that family. Tasting notes include walnut, hazelnut, pear, and plum, with sweet undertones of cocoa powder and toffee. Features a soft acidity and medium body.
