This coffee is produced by Tadesse Yonka, a second-generation coffee producer from Bensa in Ethiopia's Sidama region. The coffee is grown at 2,350 meters above sea level in the high-altitude village of Gemecho, Arbegona. It is an anaerobic natural processed coffee, fermented for 72 hours in sealed barrels, marking the roaster's first-ever release of an anaerobically processed Ethiopian coffee. The coffee features a mix of varieties and achieved a quality score of 87.25. The cherries were meticulously hand-picked and the anaerobic processing has created a vibrant, juicy profile with remarkable complexity and texture, featuring indulgent and tropical characteristics with notes of fairy floss, watermelon, and papaya.

Established in 2007 by Mark Dundon and Bridget Amor, Seven Seeds was created to embody the ideals of exceptional and transparent coffee.A pioneer in Melbourne's coffee scene, the company's name honors the story of Baba Budan, who smuggled seven coffee seeds from Yemen, breaking the Arabic world's cultivation monopoly. Their approach is founded on transparency, and since 2018, they have published the "farmgate" price they pay directly to producers. They focus on building partnerships with producers, whom they see as professional colleagues.
