Castillo variety, natural-processed with 30.1 hours of anaerobic fermentation in cherry and up to 24 days of solar drying. Intense, winey dark-fruit profile with red raspberry, purple grape, dark chocolate and cocoa nibs; roast suited to espresso with a full body.
