In Bloom is a light-roast specialty blend combining coffees from Quindío and Huila (Colombia) and Yirgacheffe (Ethiopia). The roast is composed of 45% Sidamo (Washed Community Lot, Ethiopia), 30% Huila (Washed Community Lot, Colombia), and 25% Wilton Benítez Yellow Bourbon (Thermal Shock, Finca Paraíso 92). Processes include washed and thermal shock; varieties listed are Colombia, Caturra, and Ethiopian heirlooms. Tasting notes: rose, chamomile, and a syrupy sweetness with a light, tea-like finish.
