This coffee originates from Las Vegas, Santa Bárbara, Honduras, grown by Irma Trochez at 1500 meters altitude. It features the Parainema variety and is processed using a honey method involving handpicking, floating, depulping, 24-hour fermentation, and drying on raised beds over 18-21 days. The light roast yields flavors of plum, fig, dates, and maple syrup, reflecting the syrupy sweetness and dark fruit notes characteristic of this single producer's coffee.

Color Coffee Roasters is the brainchild of Charlie Gundlach, who turned his backyard roasting obsession into a legit operation in Eagle, Colorado, back in 2016.
