MOK Specialty Coffee

About This Coffee

This Hybrid Geisha is from Finca Gascon in Guatemala, produced by Felipe Contreras. The farm follows sustainable permaculture principles with shade trees, natural irrigation, and regenerative methods including recycling fermentation lixiviates into compost. The coffee undergoes a hybrid washed process with double oxidization. Cherries are oxidized on a fermentation pile for 48 hours, then depulped and oxidized for another 48 hours before being washed and dried for 12 to 18 days. This creates a cleaner cup profile.

MOK Specialty Coffee

Founded in 2012 by Jens Crabbe, MOK began as a small roastery and bar in Leuven before expanding to Brussels. Jens, a two time former Belgian Cup Tasters Champion, is driven by a desire to explore the full potential of coffee flavor. MOK's philosophy is centered on an omni roast approach, where they develop one ideal roast profile for each coffee that works for both filter and espresso. This method aims to showcase the coffee's inherent sweetness and terroir with maximum clarity and minimal roast influence.
