About This Coffee

This Geisha coffee is from Finca El Paseo in Buesaco, South Colombia, cultivated at 1680-1800 meters altitude. Produced by Huver Castillo, a second-generation coffee producer working with his father. The coffee undergoes an experimental washed process with beer hop fermentation. After depulping to remove 20% of mucilage, the beans ferment anaerobically for 96 hours in closed inox tanks with a yeast mixture of lager beer hops and sugar cane. The fermentation is carefully monitored through temperature, pH, and Brix levels. Following fermentation, beans are washed in channels and dried on raised beds covered in plastics for 12-15 days before storage in Pasto.
