This coffee originates from Ethiopia's Sidamo region, specifically from the Aroresa woreda (administrative district). The washing station is privately owned by Wochesa Achiso and sits at 1,856 meters above sea level in the steep foothills of the Bale Mountain Range. Coffee is delivered daily by 650-750 local coffee growers who farm organically on small plots averaging 2-5 hectares at elevations between 1,900-2,100 meters. The coffee features mixed heirloom varieties and is processed using the natural method as part of Testi Coffee's Premium Cherry Selection program, which ensures only the ripest cherries are harvested. The coffee is roasted for espresso and displays flavor notes of floral, mandarin, and black tea.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
