This Ethiopian coffee is from the Yirgacheffe region at 2200 meters above sea level. Produced by Gizat Alemayohu and processed at the Gizat washing station, the coffee features mixed heirloom varieties. The washed processing includes fermentation for 36-72 hours, followed by washing and floating for defects, then drying on raised beds for 8-15 days to reach 11.5-12% moisture content. Hand-selected cherries were picked between November and December after the rainfall season with annual rainfall of 1800-2000mm. The coffee is roasted for espresso with flavor notes of floral, lemon, and Earl Grey tea.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
