A single-origin Ecuadorian coffee from Imbabura (Finca Soledad) produced by Pepe Jijon. Variety Sidra, processed with a Wave Honey method (extended fermentation and slow drying). Grown at about 1515 masl, it offers bright, fruity flavors—Elstar apple and lemon verbena—balanced by honeyed sweetness. Roasted light for filter brewing to highlight floral and fruit-forward clarity.
