About This Coffee

This honey process coffee comes from Wilder Santacruz's 5 hectare farm, Villa Sol, located outside of Aponté in Nariño, Colombia. The coffee is grown at 2000 meters altitude and consists of Caturra and Castillo varieties. The processing involves initial fermentation of cherries for 48-72 hours, followed by de-pulping and an additional 24-hour fermentation in sealed containers. The coffee then undergoes a pre-dry on a patio before moving to a mechanical dryer heated by rice husks, not exceeding 35°C, and finally dried under a shade cloth until it reaches 10-11.5% moisture content. Flavor notes include blackberry, almond, and butterscotch.
