This Pink Bourbon coffee is from the Las Flores farm in the Huila region of Colombia, grown at an altitude of 1730-1750 meters. Produced by the Vergara family and harvested from February to March, this coffee undergoes a thermo shock washed process. After cherries are picked, they are floated, washed, and oxidized for 24 hours, then depulped and fermented with mucilage for 36 hours. A thermal shock is administered by adding hot water (50°C) to the fermentation, followed by drying for 8-15 days. The cup profile features floral notes, mandarin sorbet, and yuzu. Pink Bourbon is a mutation of yellow and red bourbon varietals, known for high sweetness and silky body. Available as filter roast only.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
