About This Coffee

This single origin coffee comes from the Linarco Rodriguez farm in Palestina Huila, Colombia, at an elevation of 1710 meters. The farm is a third generation operation spanning almost 60 years, split between seven siblings who each manage their own designated area. The farm operates its own communal wet and dry mills for complete control over processing. The coffee features the Pink Bourbon variety, which genetic testing has revealed to be an Ethiopian landrace varietal rather than a Colombian bourbon mutation. The washed process involves floating ripe cherries to remove impurities, pulping, and fermenting in open air tanks for 48 hours at approximately 15 degrees. After washing, the coffee is dried in parchment over 25 days, then packed in tarpaulins and rested for 12 days to stabilize moisture content. Flavor notes include floral, stewed yellow pear, apricot, and brown sugar, with high sweetness, cleanliness, and orange-like acidity.
