This coffee is sourced from the Los Ocobos purchasing station in Ibague, Tolima, Colombia, founded in 2018 by Caravela. The coffee represents a blend of small and large producers from the same terroir at 1700-2100 meters altitude, shadowed by the snow-capped Andes Mountain Range. The varietals include Caturra, Colombia, and Castillo. The coffee undergoes washed processing with dry-pulping, followed by 40-hour fermentation, double washing, and drying on raised patio-style beds for 10-20 days. Flavor notes include redcurrant, green apple, and sugarcane/panela.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
