This is the green (unroasted) lot from Jorge Rojas’ Finca El Proceso, grown in Tolima, Colombia. The coffee is Chiroso variety, washed with a short fermentation schedule, then dried for 15 days in marquesinas. Tasting notes are juicy and tart, highlighted by plump apricot and Meyer lemon flavors.
