Seth Taylor Coffee

About This Coffee

This coffee is from Finca La Indonesia located in La Union, 90km from Pasto, Colombia, at 2300 meters above sea level. The farm is a Torres family inheritance known for exceptional coffee production for over 40 years, currently managed by Frank Torres, a Q grader. The coffee features the Maracaturra variety and is processed using the Reposado Washed method, which involves anaerobic fermentation for 48-55 hours in plastic tanks, followed by depulping and a second open-tank fermentation for 72 hours, then sun-drying for 14-17 days. Ninety percent of the farm is organic to preserve soil conditions. The flavor profile includes dark chocolate, caramel, and red currant notes. The harvest period is October to December.

Seth Taylor Coffee

Seth Taylor put his own name on this Montreal micro roastery, establishing a personal, hands on approach that extends from direct relationships with producers to origin travel and intimate cuppings. Starting as a pop up before settling in Mile End, the operation remains deliberately small, with limited production runs that prioritize quality over volume. Roasting is done in small batches with light to medium profiles showcasing origins from Ethiopia, Colombia, Guatemala, Kenya, and El Salvador. The roastery primarily operates as a production facility rather than a bustling cafe, supplying select Montreal specialty cafes through a focused wholesale program. A subscription service with personalized selections reflects Seth's belief that coffee is best when it carries the personal touch of someone who genuinely cares about every step.
