This single-origin coffee is cultivated at 1800 meters altitude in the La Unión region, 90 km from Pasto, Colombia. The farm, La Indonesia, is managed by Frank Torres using 90% organic practices. The cherries underwent a 48-hour submerged fermentation followed by a 60-hour rest in a dry tank. Final drying took place on African beds over 20 days. The coffee features exceptional clarity, sweetness, and a bright, vibrant, precise profile resulting from innovative fermentation and drying methods.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations. The first permanent cafe opened on Beaubien Street in 2016, and roasting now takes place on a Loring S15 Falcon at the Rue Masson location. Cafe Pista maintains a farm to table mentality, building direct relationships with producers to ensure quality and traceability from origin to cup.
