This Sidra coffee is from El Vergel Estate in Tolima, Colombia, grown at 1450 meters above sea level. The Bayter family has been farming at El Vergel since 1995 and shifted focus to specialty coffee in 2016. The coffee undergoes a mosto process with a 72-hour anaerobic fermentation using lixiviates from Java fermentation, followed by natural processing, careful drying, and a 30-day stabilization. The variety reached the finals of the 2025 U.S. Barista Championship. The cup profile features notes of wild rose, sun-dried mango, and peach with a fruit-forward and layered character.
