This single origin espresso from Brazil comes from Fazenda Guariroba in the Campo Das Vertentes region of Minas Gerais. The farm is run by Homero Aguilar Paiva, with the Paiva family growing coffee for 5 generations across 547 hectares, of which 203 are devoted to coffee. The coffee is Yellow Catuai variety grown at elevations between 920-1100 meters. It is processed using the pulped natural (honey) method, where cherries are partially depulped within 24 hours of harvest, then spread across patios and dried in their mucilage for two weeks until reaching 11% moisture content. The cup profile features Eureka/jumbo blueberries, chamomile tea, and hazelnut notes. This is an espresso roast suitable for espresso preparation.
